Word arahn’ tahn is spreading to friends everywhere. We have received numerous messages from friends all over the country who are looking to add plant-based recipes to their diet. Here is a recent email Beth received. As always you can check out my story here and a recent article on heart.org about my journey.
I am so glad to hear from you. I hope you and your family are doing well. Yes, I have lots of recipes. I have a few sites with recipes to check out and I will include links to my favorite recipes.

Few more recipes:
Mad Mex ChickpeaChili A Great chili
Chickpea skillet Super easy and fast
Vegetarian Chili Alex can make this!!! So easy!
Chickpea Salad Quick and easy- only lasts two days at most
I have more recipes from cooking books too, but this is a good start. We buy Chickpeas and black beans along with veggies in bulk. We always have a bowl of fruit also available to avoid snacking on bad foods (it works for Alex- I am still working on this!).
For a lot of these recipes, you can use what you like best especially when it comes to beans and certain veggies. I do a lot of prep on the weekend to have meals available during the week and always have pasta night. Pesto is great for plant-based recipes.
If you need more, don’t hesitate to email me.
